New Englands Best Sandwich Is Made With Butter

A real lobster roll is two things: a buttered, split top bun and a pile of sweet, just-cooked lobster meat. Everything else is debate. The Maine roll dresses the meat with mayo. The Connecticut roll bathes it in warm butter. Both are good. Butter is better.
Start with the bun. New England split top buns are flat on the sides so they brown beautifully in butter. If you cant find them in your grocery store, you can square off a regular hot dog bun with a knife and get close. Toast in plenty of butter until the sides are deep golden brown.
For the lobster, steam whole lobsters yourself if you can. Pull the meat from the tail and claws while still slightly warm. Toss with melted butter, a squeeze of lemon, a tiny bit of mayo for body, and minced chives. Pile high into the buns. Eat immediately. Repeat.
