Boston Baked Beans
Slow-baked navy beans in molasses, mustard, and salt pork until thick and glossy.

Ingredients
- 2 cups dried navy beans
- 1/2 lb salt pork
- 1 yellow onion
- 1/2 cup molasses
- 1/4 cup dark brown sugar
- 2 tbsp dry mustard
- 1 tbsp salt
- 5 cups water
Method
Soak beans overnight, then simmer 45 minutes until just tender.
Layer with onion and salt pork in a bean pot. Mix molasses, sugar, mustard, salt, and water and pour over.
Bake covered at 300 F for 5 hours, adding water as needed.
Uncover for the last 30 minutes to glaze the top.
