Sourdough Eggs Benedict
Toasted sourdough, Canadian bacon, poached eggs, and a velvety lemon hollandaise.

Ingredients
- 4 sourdough slices
- 8 slices Canadian bacon
- 8 large eggs
- 3 egg yolks
- 1 stick butter melted
- 1 lemon
- Cayenne
- Chives
Method
Whisk yolks and lemon juice over a bain marie, then stream in butter for hollandaise.
Toast sourdough and crisp the Canadian bacon in a skillet.
Poach eggs in simmering water for 3 minutes.
Stack bacon and eggs on toast and spoon hollandaise generously over.
