Wood-Fired Margherita Pizza
Thin crust margherita kissed by live fire with crushed tomato, basil, and mozzarella.

Ingredients
- Neapolitan dough
- 1 cup crushed San Marzano tomato
- 8 oz fresh mozzarella
- Fresh basil
- Olive oil
- Pinch of salt
- Grated parmesan
- Cracked pepper
Method
Stretch dough to a 12 inch round on a peel.
Spread sauce thinly and dot with torn mozzarella.
Slide into a 700 F wood-fired oven for 90 seconds, turning once.
Top with basil leaves, olive oil, and grated parmesan.
