Roasted Mushroom Crostini

Toasted baguette piled with garlicky thyme mushrooms and a swipe of soft cheese.

Roasted Mushroom Crostini

Ingredients

  • 1 baguette sliced
  • 1 lb mixed mushrooms
  • 4 cloves garlic
  • 2 tbsp fresh thyme
  • 4 oz soft cheese
  • 3 tbsp olive oil
  • 1 tbsp sherry vinegar
  • Salt and pepper

Method

Toast baguette slices brushed with oil for 6 minutes at 400 F.
Saute mushrooms in oil with garlic and thyme until browned, 10 minutes.
Finish with sherry vinegar and salt.
Spread baguette with cheese, pile on mushrooms, and finish with thyme.
