Memphis Baby Back Ribs
Dry rub forward, glossy and ruby red, with just enough sauce to make your fingers sticky.

Ingredients
- 3 racks baby back ribs
- 1/3 cup Memphis dry rub
- 1/2 cup apple juice
- 1/4 cup honey
- 1/2 cup tomato barbecue sauce
- Cherry wood chunks
- Yellow mustard binder
Method
Peel the membrane off the back of each rack. Brush with mustard and coat with the dry rub.
Smoke bone side down at 250 F over cherry wood for 3 hours.
Wrap in foil with apple juice and honey for 90 minutes until tender.
Unwrap, brush lightly with sauce, and return to the smoker for 20 minutes to set a sheen. Rest 10 minutes and slice between bones.
