Queso Fundido Skillet
Bubbling jack cheese skillet with chorizo, poblano, and a roasted tomato base.

Ingredients
- 8 oz chorizo
- 1 poblano pepper sliced
- 1 small onion sliced
- 3 cups shredded monterey jack
- 1/2 cup roasted tomato
- 2 cloves garlic
- Warm tortillas
- Cilantro
Method
Brown chorizo in a cast iron skillet. Add poblano and onion and cook until soft.
Stir in garlic and tomato and cook 2 minutes.
Top with all of the cheese and slide under a broiler 3 minutes until bubbling.
Sprinkle with cilantro and serve with warm tortillas for scooping.
