Red Beans and Rice
Creamy red beans simmered with smoked ham hock and andouille, ladled over rice.

Ingredients
- 1 lb dried red beans
- 1 smoked ham hock
- 12 oz andouille sausage
- 1 onion
- 1 bell pepper
- 3 ribs celery
- 2 bay leaves
- Cooked white rice
Method
Soak beans overnight, then drain.
Saute the trinity, add beans, hock, sausage, bay leaves, and 8 cups water.
Simmer 2.5 hours, stirring often, mashing some beans against the pot for creaminess.
Pull the hock, shred the meat, return it, season, and serve over rice.
