Vermont Cheddar Soup
Velvety cheddar soup with sweet apple, mustard, and a splash of cream.

Ingredients
- 3 cups sharp Vermont cheddar
- 1 tart apple grated
- 1 onion diced
- 2 carrots diced
- 3 tbsp flour
- 3 tbsp butter
- 4 cups chicken stock
- 1 cup cream
Method
Sweat onion and carrot in butter for 6 minutes.
Stir in flour and cook for 2 minutes.
Whisk in stock and simmer 12 minutes. Stir in apple.
Off the heat, whisk in cheddar in handfuls, then finish with cream and mustard.
