Iowa Pork Tenderloin Sandwich
Pounded-thin pork cutlet, breaded and fried until it overhangs every side of the bun.

Ingredients
- 4 thin pork cutlets
- 1 cup flour
- 2 eggs beaten
- 2 cups seasoned cracker crumbs
- 4 hamburger buns
- Pickle slices
- Sliced onion
- Yellow mustard
Method
Pound cutlets between plastic wrap to 1/4 inch thick.
Dredge in flour, dip in egg, and press into cracker crumbs.
Fry in 350 F oil for 3 minutes per side until deep golden.
Plate on buns with mustard, pickle, and onion.
