Santa Fe Chicken Enchiladas
Christmas-style enchiladas with red and green chile sauces and shredded chicken.

Ingredients
- 3 cups shredded chicken
- 12 corn tortillas
- 2 cups red chile sauce
- 2 cups green chile sauce
- 2 cups shredded jack
- 1/2 cup sour cream
- 1/2 cup chopped onion
- Fresh cilantro
Method
Warm tortillas in oil briefly to make them pliable.
Roll with chicken and place seam down in a dish.
Ladle red sauce on one half, green sauce on the other, then top with cheese.
Bake at 375 F for 25 minutes. Top with sour cream and cilantro.
