Black Bean and Corn Salad
Bright black bean salad with charred corn, red onion, lime, and avocado.

Ingredients
- 2 cans black beans
- 3 ears charred corn
- 1 red onion
- 2 avocados
- 1 jalapeno
- 2 limes
- Cilantro
- Olive oil and salt
Method
Char corn on a hot grill until kissed black in spots. Cut from cobs.
Drain and rinse the beans.
Combine all ingredients in a bowl.
Dress with lime juice, olive oil, and salt to taste. Fold in avocado last.
