Tortilla Soup

Smoky tomato and chile soup with shredded chicken, crisp tortilla strips, and avocado.

Tortilla Soup

Ingredients

  • 1.5 lb shredded cooked chicken
  • 1 can fire roasted tomato
  • 2 dried guajillo chiles
  • 1 onion
  • 3 cloves garlic
  • 6 cups stock
  • Tortilla strips
  • Avocado and lime

Method

Toast and rehydrate guajillos for 15 minutes.
Blend chiles with tomato, onion, garlic, and a cup of stock.
Pour into a pot with remaining stock and shredded chicken. Simmer 25 minutes.
Ladle into bowls and top with tortilla strips, avocado, and lime.
