Maple Bacon Wrapped Tenderloin
Pork tenderloin armored in thick-cut bacon and lacquered with maple syrup over smoke.

Ingredients
- 2 pork tenderloins
- 12 strips thick cut bacon
- 1/3 cup maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp smoked paprika
- 1 tsp black pepper
- Apple wood
Method
Pat tenderloins dry and rub with mustard, paprika, and pepper.
Weave bacon strips into a tight blanket and roll around each tenderloin.
Smoke at 275 F over apple wood, brushing with maple syrup every 15 minutes.
Pull at 145 F internal, about 75 minutes. Rest 10 minutes, then slice into medallions.
