Buttermilk Fried Chicken
24-hour buttermilk brine, double-dredged seasoned flour, and a shatter-crisp golden crust.

Ingredients
- 8 piece cut chicken
- 3 cups buttermilk
- 2 tbsp hot sauce
- 3 cups all purpose flour
- 2 tbsp paprika
- 1 tbsp garlic powder
- Salt and pepper
- Peanut oil for frying
Method
Whisk buttermilk and hot sauce. Submerge chicken and chill 24 hours.
Season flour with paprika, garlic powder, salt, and pepper.
Dredge chicken in flour, dunk back into buttermilk briefly, then dredge again.
Fry in 325 F peanut oil 14 minutes for white meat and 16 for dark, flipping once. Drain on a rack.
