Collard Greens with Smoked Ham Hock
Long-simmered collards with smoked ham hock and a splash of pepper vinegar.

Ingredients
- 3 lb collard greens
- 1 large smoked ham hock
- 1 yellow onion diced
- 6 cups chicken stock
- 3 cloves garlic
- 2 tbsp cider vinegar
- 1 tsp red pepper flakes
- Salt
Method
Strip the tough stems and chop the greens. Rinse in cold water and drain.
Brown onion in a heavy pot, add garlic, then nestle in the ham hock and stock.
Pile in the greens, cover, and simmer 2 hours until silky.
Pull the hock, shred the meat, return it to the pot, and finish with vinegar and pepper flakes.
