Skillet Cornbread
Crispy edges, tender crumb, and a hot cast-iron pour that smells like Sunday supper.

Ingredients
- 1.5 cups yellow cornmeal
- 1/2 cup flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1.25 cups buttermilk
- 2 eggs
- 1/3 cup melted butter plus 2 tbsp for the pan
Method
Heat oven to 425 F with a 10 inch cast iron skillet inside.
Whisk dry ingredients in one bowl and wet in another. Combine just until mixed.
Add 2 tbsp butter to the hot skillet, swirl, then pour in batter.
Bake 22 minutes until the top springs back. Cool 5 minutes before slicing in wedges.
