Sweet Potato Pie
Spiced sweet potato custard with brown sugar and bourbon in a buttery crust.

Ingredients
- 1 unbaked 9 inch pie shell
- 2 cups roasted sweet potato
- 3/4 cup brown sugar
- 1/2 cup evaporated milk
- 2 eggs
- 1 tbsp bourbon
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Method
Roast sweet potatoes at 400 F until tender, then peel and weigh out 2 cups.
Whip the potato smooth in a mixer with sugar, milk, and eggs.
Stir in bourbon, cinnamon, and nutmeg. Pour into the shell.
Bake at 350 F for 55 minutes until set. Cool to room temperature, then chill 2 hours.
